In the mouth
Round and generous on entry, with good flesh and structure. The palate is characterised by fresh acidity and a clean, slightly tense finish that lingers pleasantly.
On the nose
Aromatic and inviting: white orchard fruits dominate—crisp apple and white peach—with a subtle mineral undertone characteristic of Chablis limestone.
On the eye
Pale gold, brilliant and clear. The colour speaks of careful handling and clean winemaking.
Breeding
12 months
I find this wine particularly well-suited to fish en papillote or simply grilled white fish. The mineral acidity cuts through richness beautifully, and the fruit doesn't overwhelm. It's the kind of Chablis that reminds you why the appellation endures—honest, food-friendly, and true to its terroir.
