Breeding
100% in temperature-controlled stainless steel vats to preserve aromatic brightness.
On the eye
Pale gold with greenish glints, displaying crystalline clarity and luminous brilliance.
On the nose
Elderflower and acacia blossom lead, followed by fresh pear and a whisper of white stone minerality. The nose is clean and direct, without affectation.
In the mouth
Young and lively on the attack, with vibrant citrus and orchard fruit—grapefruit, lemon, green apple—balanced by the characteristic salinity and tension of true Chablis. The finish is dry and persistent.
A classic aperitif wine, equally at home with shellfish, white fish preparations, and fresh goat's cheese. The acidity and mineral structure make it particularly suited to grilled sole, moules marinières, or simply as a contemplative glass on its own. Drink now through 2026.

Domaine Billaud-Simon is a wine estate in Chablis (Burgundy). Founded in 1815. Around 20 hectares of vines. Grape: Chardonnay. Appellations: Chablis, Chablis Premier Cru (Mont de Milieu, Montée de Tonnerre, Vaillons), Chablis Grand Cru (Les Clos, Vaudésir, Blanchots, Les Preuses). Acquired by Faiveley in 2014. Wines of great minerality and fine tension.
