Élevage sur lies fines d'environ 10 à 12 mois en demi-muids avec bâtonnages modérés pour apporter de l'ampleur et du gras tout en préservant l'éclat du fruit.

Robe or jaune brillant aux reflets argentés et verdâtres légers dans sa jeunesse, évoluant vers des nuances d'or plus soutenues au fil du temps. Limpide et très lumineuse
On the nose
Premier nez d’abricot, le coing frais et les fleurs blanches. Le deuxième nez se montre minéral et finement boisé
In the mouth
En bouche, on trouve un Chenin taillé en fraîcheur avec une belle matière phénolique qui délivre une fine tannicité en finale
Si Philippe Alliet est légendaire pour ses rouges, son Chinon Blanc est une pépite trop souvent méconnue qui rivalise avec les plus beaux Saumur ou Montlouis. Le travail d'orfèvre sur l'élevage en demi-muids maîtrise la haute acidité du Chenin pour lui offrir un toucher de bouche satiné sans jamais masquer sa tension crayeuse. Established at Cravant-les-Coteaux in the heart of the Chinon appellation, Domaine Philippe Alliet farms 17 hectares of Cabernet Franc and Chenin Blanc across clay-limestone, clay-siliceous and gravelly soils on south-facing slopes. Philippe Alliet, third generation of the family, took over in 1978 and forged a quietly influential style through the 1990s; his son Pierre joined him in 2005, strengthening a lineage built on precision rather than fashion. At Halles Quercamps, we have selected this estate for the rigour of its approach — biodynamic practices followed without the pursuit of certification — and for the clarity with which its wines articulate the distinct facets of the Loire terroir. A reliable address for those who want Chinon as it truly is.

Issu d'une parcelle d'moins d'un hectare cultivée en raisonné, ce Chenin offre une fraîcheur cristalline, relevée d'une minéralité fine et d'une tannicité discrète en finale. À servir sur un poisson délicat ou en apéritif contemplatif.
