On the eye
Deep purple with brilliant luminosity; a colour suggesting both youth and concentration.
On the nose
A complex bouquet led by dark cherry and blueberry, interwoven with smoky, pencil-shaving minerality and white pepper. The signature Graves earthiness is pronounced and compelling.
In the mouth
The palate enters with frank energy and fine-grained tannin structure. Mid-palate depth is supported by mineral precision; the finish is clean and persistent, with no heaviness.
This is a wine of genuine character—the kind Pessac-Léognan does so well. The texture is refined, the balance assured. I would serve it with a fine beef course or a generous mushroom dish; it will not overwhelm, but rather complement and enhance. A worthy addition to any serious Graves collection.

CHATEAU OLIVIER
Spanning 60 hectares of Günzian gravel soils at Léognan, Château Olivier holds the rare distinction of being classified in both red and white within Pessac-Léognan — one of only six such crus in the 1953 Graves classification. The medieval château, listed as a Monument Historique, roots this estate in a viticultural history stretching back to the fourteenth century. Since 1886, the de Bethmann family has brought consistent rigour to the vineyard, now underpinned by full organic certification. At Halles Quercamps, we have selected this château for the precision of its two colours, the typicity of its gravel terroir, and the integrity of a winemaking approach that honours classified heritage without sacrificing responsibility.
