In the mouth
The palate is elegant and refined, with fine-grained tannins providing structure without heaviness. Bright acidity maintains freshness throughout, whilst the fruit character remains well-defined and persistent

This wine pairs beautifully with roasted veal fillet, particularly in classic preparations such as Rossini. It complements roast beef admirably, and works particularly well with duck breast prepared with Espelette pepper, where its acidity and tannin structure balance the richness of the dish.
