Certified organic viticulture from the south of France

  • Cultivated across soils of remarkable diversity, this domaine benefits from the geological complexity of its terroir. The varied substrates—including gypsum deposits—impart distinctive mineral character to the wine.
  • A Chardonnay from Languedoc offers an intriguing departure from the familiar. Here, the southern sun and limestone-rich soils create a wine of unexpected freshness and definition, rewarding those willing to venture beyond convention.
  • The wine takes its name from gypsum, the pale, lustrous mineral that defines much of the vineyard's subsoil. This geological signature translates into a luminous quality on the palate—a brightness that lingers through the finish.

This is a wine that stands confidently on its own merits, requiring no accompaniment to reveal its character. The tasting experience proves genuinely thought-provoking: a southern Chardonnay that challenges preconception and rewards attention. Organic viticulture here yields genuine expression of place.

BORIE DE MAUREL

Borie de Maurel is established at Félines-Minervois, on the lower slopes of the Montagne Noire, farming 35 hectares of clay-limestone and schistous soils under certified organic management. Founded in 1989 by Michel Escande — a former sailing instructor turned vigneron — the estate swiftly became one of the most respected names in Minervois, earning international press recognition for its cuvée Sylla as early as the 1990s. At Halles Quercamps, we have selected this estate for the precision of its blends, the honest expression of its contrasting terroirs, and the rigour with which the Escande family has pursued organic viticulture across three decades. A reliable address for anyone seeking Minervois at its most accomplished.
