In the mouth
Considerable length and power on the palate, with tightly-woven yet silken tannins. The wine shows excellent balance between fruit intensity and structural grip, with a persistent finish.
On the nose
Concentrated bouquet of red fruits—cherry and plum—with white pepper spice and subtle mineral notes that reflect the granite subsoil. The aromatics are focused and layered.

Deep garnet robe with violet reflections, showing considerable intensity and clarity
Breeding
Ageing for 15 months in oak barrels, of which 15% new wood
L'Olivaie pairs beautifully with game preparations—a tournedos of hare with chicory would be an inspired pairing. The wine's structure and spiced fruit character complement rich, earthy dishes with natural elegance. Also excellent with roasted lamb or beef dishes of substance.

Based in Mauves, Ardèche, Domaine Coursodon farms 16 hectares of steep granite and schist terraces in the Saint-Joseph appellation, Vallée du Rhône. Founded in the late nineteenth century, the estate has passed through five generations: Jérôme Coursodon joined his father Pierre in 1998 and has steadily established it as one of the appellation's most authoritative addresses, producing Syrah-based reds and whites from Marsanne and Roussanne. At Halles Quercamps, we have selected this estate for the precision of its élevage, the taut minerality of its whites, and the depth of its reds from terraces overlooking the Rhône. A characterful, HVE-certified estate we recommend without reservation to lovers of serious Saint-Joseph.
