In the mouth
The attack is generous and fruit-forward, with good acidity providing structure. The wine refines progressively through the mid-palate, developing a pleasant minerality that extends to a clean, lingering finish.

The bouquet unfolds with honeyed notes, baked apple, and dried fruit, complemented by citrus brightness. A subtle brioche character, derived from measured élevage, adds complexity and warmth to the aromatic profile.

Brilliant pale gold, with a fine clarity that speaks to careful vinification.
Breeding
Ageing in the Burgundian manner in two-wine barrels for 10 months to avoid excessive oak influence
M. Francois
This wine shows particular affinity with simply prepared fish dishes—Dover sole, sea bass, or turbot benefit from its aromatic delicacy and balanced acidity. It would also complement shellfish and lighter poultry preparations. Serve at 10–12°C to preserve its aromatic finesse.
