Breeding
20 months on fine lees, in stainless steel vats and small oak barrels
On the eye
Pale golden hue with bright reflections, characteristic of a well-made young Chablis of quality.
On the nose
An expressive bouquet revealing notes of green apple and lemon, with the distinctive flinty minerality that defines wines from this limestone-rich region.
In the mouth
Lively attack followed by pleasing roundness and a long, mineral-driven finish that lingers with elegance and precision.
M. Francois
This represents an excellent choice for those who appreciate pure, elegant white wines. It exemplifies what Chablis does best: expressing the character of Chardonnay with restraint and mineral precision. A wine for the discerning palate seeking authenticity and finesse rather than richness.

LA CHABLISIENNE

Based in Chablis in the Yonne, La Chablisienne is the appellation's only cooperative, farming 1,250 hectares of Kimmeridgian limestone and marl and accounting for more than a quarter of all Chablis produced. Founded on 1st May 1923 by Abbé Balitrand, the cooperative today unites around 300 grower-members producing exclusively white Chardonnay, with both Terra Vitis and organic certification underpinning its environmental commitments. At Halles Quercamps, we have selected this estate for the consistency of its range, the characteristic mineral expression of the Chablis terroir, and the seriousness of its approach to sustainable viticulture. A dependable reference for anyone seeking the true character of the appellation.
