Oak-aged complexity meets Champagne elegance

  • This distinctive cuvée is vinified entirely in oak, delivering uncommon richness and aromatic complexity. The wood élevage imparts subtle vanilla and toasted notes whilst preserving the refined character Billecart-Salmon is known for.
  • A masterclass in assemblage: Pinot Noir provides structure, Chardonnay contributes finesse, and Pinot Meunier adds fruit-forward character. The result is a Brut of genuine personality and depth.
  • The oak ageing distinguishes this champagne from the house's classic expressions. It appeals to those seeking a richer, more structured champagne with pronounced character and complexity.

In the mouth
Lively attack with good acidity and rich texture. Ripe fruit flavours meld with toasted and spiced oak notes, leading to a long, harmonious finish that lingers with elegance.
On the nose
Intense aromas of fresh stone fruit and citrus, layered with brioche and toasted oak. The bouquet reflects both fruit character and wood influence in pleasing balance.
On the eye
Brilliant golden hue with fine, persistent effervescence. The mousse speaks to quality and careful vinification.
Breeding
This cuvée is aged in oak barrels, a method that enriches the champagne with distinctive complexity and texture whilst respecting the expression of the three grape varieties.
M. Francois
I find this Brut Sous Bois a genuine expression of Billecart-Salmon's craft—a champagne that honours tradition whilst embracing measured innovation. The oak integration is assured, never dominating. It rewards those who appreciate structure and complexity in their champagne. A considered choice for serious collectors and those exploring beyond the house's more familiar releases.

CHAMPAGNE BILLECART-SALMON

Based in Mareuil-sur-Aÿ (Marne), Billecart-Salmon cultivates 100 hectares across the three great Champagne terroirs — Côte des Blancs, Montagne de Reims and Vallée de la Marne. Founded in 1818 by Nicolas-François Billecart and Élisabeth Salmon, the House is today led by Mathieu Roland-Billecart, seventh generation, who upholds a style built on finesse and precision in blending Pinot Noir, Chardonnay and Pinot Meunier over limestone and clay-limestone soils. At Halles Quercamps, we have selected this House for the rigour of its HVE-certified viticulture, the coherence of its range, and a consistency of quality memorably confirmed when the cuvée NFB 1959 was crowned Champagne of the Millennium in 1999. A benchmark Champagne House we are proud to list.
