In the mouth
The palate demonstrates excellent structure and persistence, with a notably long finish that sustains the wine's mineral and fruit-driven character. The balance between acidity and body creates an elegant, refined impression.
On the nose
The bouquet unfolds with considerable complexity and intensity, revealing the aromatic signature of Côtes de Provence. Mineral notes and white stone fruit emerge, with subtle herbaceous undertones characteristic of the appellation.
On the eye
A luminous, pale gold appearance with excellent clarity and brightness
M. Francois
This wine serves admirably as an aperitif wine, and pairs with distinction alongside grilled fish and summer salads. Its aromatic complexity and dry character make it particularly suited to lighter seafood preparations and fresh seasonal cuisine, whilst its structure allows it to accompany more substantial dishes with equal grace.

CHATEAU ROUBINE

Set in Lorgues, in the Var, Château Roubine farms 72 hectares of Côtes de Provence on clay-limestone soils, cultivated entirely in Demeter-certified biodynamics. The estate's history stretches back to the fourteenth century — first as a Templar holding, then under the Order of Saint John of Jerusalem — before Valérie Rousselle took ownership in 1994 and began a methodical conversion to organic and biodynamic farming, earning both AB and Demeter certification in 2017. At Halles Quercamps, we have selected this estate for the rigour of its biodynamic approach, the breadth of its encépagement — Grenache, Syrah, Mourvèdre, Rolle, Tibouren, Cinsault — and the precision it brings to all three colours. A serious address for those who seek Provence at its most demanding.
