In the mouth
Refined and elegant on the palate, with fine-grained tannins and a delicate interplay of sweet spice and morello cherry. The wine maintains excellent balance and textural finesse throughout.
On the nose
The nose opens with assertive black pepper and cumin, followed by savoury tapenade notes. Secondary aromas of thyme and garrigue emerge, underpinned by ripe red fruits characteristic of the vintage.
On the eye
Deep purple robe with violet highlights, suggesting both youth and concentration.
Breeding
Aged a minimum of 16 months in vat. Very light filtration.
A natural companion to roasted lamb or veal in sauce-based preparations. The wine's structure and aromatic profile complement rich, savoury dishes particularly well. Serve at 16–17°C to appreciate its complexity.

BORIE DE MAUREL
Borie de Maurel is established at Félines-Minervois, on the lower slopes of the Montagne Noire, farming 35 hectares of clay-limestone and schistous soils under certified organic management. Founded in 1989 by Michel Escande — a former sailing instructor turned vigneron — the estate swiftly became one of the most respected names in Minervois, earning international press recognition for its cuvée Sylla as early as the 1990s. At Halles Quercamps, we have selected this estate for the precision of its blends, the honest expression of its contrasting terroirs, and the rigour with which the Escande family has pursued organic viticulture across three decades.
