In the mouth
The palate shows the characteristic structure of Syrah: firm tannins, good acidity, and a savoury mid-palate. The finish is long and dry, with lingering spice and a hint of garrigue. Well-integrated oak does not dominate.
On the nose
Prominent notes of dark berries—blackberry and damson—with white pepper, dried herbs, and a subtle mineral undertone. The aromatics are restrained and precise rather than voluptuous.
On the eye
Deep ruby, almost garnet at the rim. Opaque core suggesting good concentration.
Breeding
Whole-bunch fermentation with extended maceration. Ageing 16 months in vat.
A wine of considerable food compatibility. The structure and acidity suit game birds and venison particularly well. Equally at home with charcuterie, cured meats, and roasted lamb. Serve at 16–17°C. Decant 20 minutes before service if opened young.

BORIE DE MAUREL
Borie de Maurel is established at Félines-Minervois, on the lower slopes of the Montagne Noire, farming 35 hectares of clay-limestone and schistous soils under certified organic management. Founded in 1989 by Michel Escande — a former sailing instructor turned vigneron — the estate swiftly became one of the most respected names in Minervois, earning international press recognition for its cuvée Sylla as early as the 1990s. At Halles Quercamps, we have selected this estate for the precision of its blends, the honest expression of its contrasting terroirs, and the rigour with which the Escande family has pursued organic viticulture across three decades.
