In the mouth
Rich and structured, with a lively acidity that cuts through the weight. The palate is complex, with lingering notes of dried fruit and a mineral finish.
On the nose
Hazelnut and almond predominate, with undertones of walnut and a subtle hint of oxidative complexity. The nose speaks of time and tradition.
On the eye
Deep golden amber, characteristic of extended barrel ageing under protective yeast film.
Breeding
Minimum 6 years in oak barrels under flor (unoaked barrels)
Serve with smoked fish such as haddock, or dishes featuring parsley and garlic—escargots à la bourguignonne are a natural pairing. The wine's intensity also complements spiced curry dishes and aged cheeses. A wine of considerable character.

Domaine Berthet-Bondet is a wine estate in Château-Chalon (Jura). Run by Jean Berthet-Bondet. Around 15 hectares. Grapes: Chardonnay, Savagnin, Trousseau, Poulsard. Appellations: Château-Chalon (Vin Jaune), Côtes du Jura, Crémant du Jura, Macvin. Blue and grey marl soils (lias). Traditional Jura vinification. Wines of great typicity.
