Breeding
Extended ageing (often 12 to 18 months) in oak casks (barrels and demi-muids) with minimal new wood to preserve the minerality
On the eye
Pale golden in colour with subtle luminosity.
On the nose
Generous and layered: dried fruits, honeycomb, poached white fruits, citrus pulp, a whisper of cinnamon. Menthol notes emerge on the finish, adding freshness and intrigue.
In the mouth
Ample and full-bodied, with striking juiciness and salinity. The palate shows excellent grip and structure, balanced by vibrant energy. The finish is persistent and mineral-driven.

Patrick Baudouin has crafted an Anjou Blanc of impressive density and purpose. This is fundamentally a wine of terroir—it prioritises tension and depth over easy aromatics. Essential for understanding Chenin Blanc's potential on the schist soils of Anjou Noir. Pairs beautifully with vegetable and prawn tempura, or turbot with beurre blanc.

Domaine Patrick Baudouin is a wine estate in Chaudefonds-sur-Layon (Maine-et-Loire), Anjou (Loire Valley). Around 15 hectares farmed biodynamically. Main grape: Chenin Blanc. Appellations: Anjou Blanc, Coteaux du Layon, Quarts de Chaume. The wines express the purity of Chenin Blanc on schist and limestone. Manual harvesting in successive pickings.
