Brilliant garnet robe with excellent clarity and depth of colour
On the nose
Powerful aromatic expression of dark fruits—blackcurrant and plum—with subtle secondary notes emerging as the wine opens. The bouquet speaks to both fruit ripeness and the mineral character of the terroir.
In the mouth
The palate is light-footed and elegant, with fine-grained tannins that integrate seamlessly. Considerable freshness runs through the mid-palate, providing lift and definition. A wine of poise rather than weight.

This wine pairs beautifully with classic French cuisine: roasted veal fillet, particularly in richer preparations such as Rossini, beef roasted in the oven, or duck breast with Espelette pepper. The wine's acidity and tannin structure complement game and richly sauced meat dishes admirably.

CHATEAU DE FONBEL

Set across 16 hectares of clay-sand and gravelly soils on the Saint-Émilion plain, Château de Fonbel is a Bordeaux rouge of genuine pedigree. In the Vauthier family's hands since 1971, it serves as the experimental vineyard for Château Ausone, today overseen by Pauline Vauthier with the same rigour. The estate is engaged in organic conversion, planting Merlot alongside Cabernet Franc, Cabernet Sauvignon, Carmenère and Petit Verdot. At Halles Quercamps, we selected this château for its serious family stewardship, its firm roots in one of Bordeaux's most celebrated appellations, and its fascinating relationship with Ausone. A Saint-Émilion worth following closely.
