  • The mousse is refined and persistent, with fine bubbles that reveal the wine's delicate structure. The palate remains fresh and mineral throughout, a hallmark of quality sparkling winemaking.

Breeding
Extended ageing on lees (often over 18 months) to refine the bubble and develop aromatic complexity.
On the eye
Pale gold with crystalline highlights and a fine, persistent bead.
On the nose
Granny Smith apple, ripe pear, and yellow citrus zest. The aromatics are restrained and elegant, reflecting the cool-climate provenance of the Jura.
In the mouth
The palate echoes the nose with admirable clarity. Bright acidity frames notes of green apple and citrus, whilst the zero dosage allows the wine's mineral backbone to emerge. A clean, refreshing finish.
M. Francois
Serve as an aperitif, or pair with shellfish, light seafood preparations, and fresh cheeses. The wine's acidity and dryness also complement tarte Tatin and other apple-based desserts. Chill to 8–10°C and consume within three years of purchase for optimal freshness.

Domaine Berthet-Bondet is a wine estate in Château-Chalon (Jura). Run by Jean Berthet-Bondet. Around 15 hectares. Grapes: Chardonnay, Savagnin, Trousseau, Poulsard. Appellations: Château-Chalon (Vin Jaune), Côtes du Jura, Crémant du Jura, Macvin. Blue and grey marl soils (lias). Traditional Jura vinification. Wines of great typicity.
