In the mouth
Substantial and well-proportioned on the palate. Fine-grained tannins provide structure without heaviness, whilst the mid-palate shows genuine depth and persistence.
On the nose
Ripe red fruits dominate, with subtle spice notes emerging. The bouquet develops gradually, revealing the wine's underlying structure and finesse.
On the eye
Deep garnet, with excellent colour intensity and clarity.
Breeding
15 to 18 months in new oak barrels (60 %), on fine lees
M. Francois
This wine pairs beautifully with game birds and red meat dishes of substance. The tannin structure and acidity make it particularly suited to venison, pheasant, and duck preparations. Equally rewarding with aged cheeses.

Château Canon La Gaffelière is a wine estate in the Saint-Émilion Grand Cru appellation (Bordeaux), classified Premier Grand Cru Classé B. Area: 19.5 hectares. Owned by Count Stephan von Neipperg. Grapes: Merlot (55%), Cabernet Franc (35%), Cabernet Sauvignon (10%). Clay-limestone and sandy soils. Biodynamic farming. One of the most consistent estates in Saint-Émilion.
