In the mouth
Fleshy and well-proportioned on the palate. Fine-grained tannins provide structure without aggression. The wine carries good length, with a dry finish that invites contemplation rather than immediate gratification.
On the nose
Ripe red fruits—plum and cherry—meld with discreet spice notes. The bouquet is restrained and layered, suggesting careful oak integration rather than dominance. Air reveals further nuance.
On the eye
Deep garnet with subtle brick undertones. A wine of substance and maturity.
Breeding
15 to 18 months in new oak barrels (60%), on fine lees
M. Francois
Canon la Gaffeliere's 2016 pairs exceptionally well with game birds and venison, where its structured tannins and subtle spice complement rich, savoury preparations. Also suited to beef dishes of moderate intensity. Decant thirty minutes before service to allow the wine to open fully.
