On the eye
Brilliant pale gold with green reflections
On the nose
Ripe citrus notes—lemon and grapefruit—mingle with delicate white flowers. The bouquet is clean and mineral-driven, characteristic of the terroir.
In the mouth
The attack is lively and precise. Excellent structure supports the wine's length, with a mineral finish that lingers pleasingly. Balanced acidity defines the palate.
A Premier Cru of considerable merit. Mont de Milieu pairs beautifully with fish—particularly sole, turbot, or shellfish preparations. The wine's crisp acidity and mineral character complement seafood with natural elegance. Also rewarding with lighter poultry dishes or simply as an aperitif wine of genuine substance.

Domaine Billaud-Simon is a wine estate in Chablis (Burgundy). Founded in 1815. Around 20 hectares of vines. Grape: Chardonnay. Appellations: Chablis, Chablis Premier Cru (Mont de Milieu, Montée de Tonnerre, Vaillons), Chablis Grand Cru (Les Clos, Vaudésir, Blanchots, Les Preuses). Acquired by Faiveley in 2014. Wines of great minerality and fine tension.
