A complex bouquet combining white flowers with fresh spice notes—anise and fennel are particularly evident. The aromatics suggest both delicacy and substance.
On the eye
Pale yellow-green with golden glints. Clear and limpid.
Breeding
Stirring on fine lees in concrete vats for 4 to 5 months

This wine pairs naturally with white fish and shellfish, lighter poultry dishes, and lamb. It is equally at home with goat's cheese and other fresh, creamy cheeses. Serve at 8–10°C to appreciate its full aromatic range.

CHÂTEAU D'ANGLÈS

Set on the maritime slopes of La Clape at Saint-Pierre-la-Mer in the Aude, Château d'Anglès covers 45 hectares of hard limestone scree and rounded galets within the Languedoc appellation, shaped by the Mediterranean. Documented as early as 1226 under the Baillys d'Anglès, the estate was restructured from 2001 by Eric Fabre — formerly technical director at Château Lafite Rothschild — and his wife Christine, bringing Bordeaux precision to a resolutely southern terroir. The result is a range of reds, whites, and rosés of genuine character, all produced under HVE certification. At Halles Quercamps, we selected this estate for its exceptional terroir, rigorous viticulture, and the clarity of its wines. A Languedoc of real substance, rooted in its soil.
