In the mouth
The palate is fleshy and well-structured, with fine tannins that provide framework without harshness. Good mid-palate weight and a clean, persistent finish that speaks to the wine's breeding and balance.
On the nose
Ripe red fruits dominate the bouquet—cherry and plum—with subtle spice notes and a whisper of oak integration. The aromatics are composed and refined, neither showy nor austere.
On the eye
Deep garnet, with the colour intensity characteristic of well-ripened Merlot-based blends.
Breeding
15 to 18 months in new oak barrels (60 %), on fine lees
M. Francois
Excellent with game birds and red meat dishes of substance. The wine's structure and tannin profile make it particularly suited to venison, wild boar, or a well-hung pheasant. Also rewarding simply with aged cheeses. Drinking well now, but will develop further complexity over the next decade.

Château Canon La Gaffelière is a wine estate in the Saint-Émilion Grand Cru appellation (Bordeaux), classified Premier Grand Cru Classé B. Area: 19.5 hectares. Owned by Count Stephan von Neipperg. Grapes: Merlot (55%), Cabernet Franc (35%), Cabernet Sauvignon (10%). Clay-limestone and sandy soils. Biodynamic farming. One of the most consistent estates in Saint-Émilion.
