Six months in stainless steel tank
M. Francois
This wine's generosity and approachability make it ideal for informal entertaining. Serve it lightly chilled alongside Spanish tapas—cured meats, manchego, marinated vegetables—or with simple charcuterie. Its supple tannins and fruit-forward profile suit relaxed, convivial occasions without demanding particular ceremony.

CHATEAU D'AYDIE

At the foot of the Pyrénées-Atlantiques, Château d'Aydie farms 58 hectares on the sun-drenched slopes of Aydie, at the heart of one of the South-West's most distinctive appellations, Madiran. Founded in 1927 by Frédéric Laplace and still in family hands, the estate has made Tannat its calling card: dense, structured reds built for the cellar, alongside whites drawn from Petit and Gros Manseng. At Halles Quercamps, we have selected this estate for the integrity of its HVE-certified vineyard, the diversity of its soils — argilo-calcaires, gravelly terraces and boulbènes — and the remarkable consistency of its wines across vintages. A reliable reference for anyone who wants the true character of the South-West, without compromise.
