In the mouth
The palate shows admirable tension and clarity. Blackcurrant and cherry fruit are balanced by fine tannins and a mineral backbone. The finish is clean and persistent, with no excess.
On the nose
Cassis and cherry dominate, with a subtle undercurrent of smoke and mineral earth. The aromatics are restrained and precise, inviting rather than assertive.
On the eye
Ruby with violet glints. Clear and bright.
This wine pairs naturally with charcuterie and mushroom terrines, grilled red mullet with tapenade and basil, or Basque-style poultry dishes. Its acidity and structure also make it an excellent accompaniment to lighter fish preparations and aged cheeses. Serve slightly cool, around 14–15°C.

Domaine Saint-Nicolas is a wine estate in the Fiefs Vendéens appellation (Vendée, Loire Valley). Run by Thierry Michon. Around 47 hectares farmed biodynamically. Grapes: Chenin Blanc, Chardonnay, Pinot Noir, Négrette, Cabernet Franc, Gamay. Schist and gneiss soils. The wines express Atlantic influence with fine salinity and remarkable freshness.
