Breeding
At that time, the estate practised lengthy oak élevage (12 to 15 months).
On the eye
Brilliant pale gold with green-tinged highlights. Clear and luminous.
On the nose
Floral notes—white flowers and hawthorn—open to subtle butter and almond. A whisper of oak provides structure without intrusion. The nose is restrained and inviting rather than showy.
In the mouth
Mineral and well-balanced. The palate shows good tension with a saline quality that speaks of limestone terroir. Acidity is crisp without aggression. The finish is clean and persistent, leaving a pleasant mineral echo.

I have long admired Maldant Pauvelot's consistency. This 1er Cru is precisely what a fine white Burgundy should be—disciplined, food-friendly, and true to its appellation. It pairs beautifully with seafood in cream sauces, sole meunière, or simply grilled fish with herbs. The mineral backbone also makes it an excellent aperitif wine.
