In the mouth
Rich and silken on the palate, with a supple, voluptuous mid-palate. Fine-grained tannins provide structure without severity. The finish is long and composed, with lingering notes of dark fruit and tobacco leaf.
On the nose
Powerful Cabernet Sauvignon character emerges first: ripe cassis and plum, followed by nuances of fresh leather, graphite and subtle cedar. The bouquet develops with air.
On the eye
Deep, intense garnet red with excellent clarity and depth.
Breeding
Aged in barrels (one-third new oak) for 16 to 18 months.
M. Francois
This wine pairs beautifully with beef fillet, particularly when simply prepared to allow the wine's elegance to shine. It complements Camembert enriched with Calvados, and proves excellent with duck breast canapés. The wine will reward cellaring for a decade or more.
