In the mouth
Marked by restraint and elegance, the wine is generous yet balanced. Stone fruit flavours develop with honeyed richness, whilst a pleasant acidity provides structure and prevents any sense of heaviness. The finish is sustained and refined.
On the nose
A complex bouquet of ripe apricot and peach, with citrus notes and hints of tropical fruit. Honeyed undertones provide sweetness without cloying; subtle spice emerges with aeration.
On the eye
Deep golden yellow, with amber highlights that suggest maturity and concentration.
Breeding
16 to 18 months in French oak demi-muids

Serve this wine with fresh fruit-based desserts, fine pastries, or dark chocolate preparations. Its balance of sweetness and acidity makes it equally suited to blue cheese. Decant thirty minutes before serving to allow the bouquet to fully develop. Enjoy now or cellar for a further five to eight years.

Domaine Didier Dagueneau is a wine estate in the Pouilly-Fumé appellation (Loire Valley). Founded by Didier Dagueneau, now run by his son Louis-Benjamin. Grape: Sauvignon Blanc exclusively. Around 12 hectares farmed biodynamically. Cuvées: Silex, Pur Sang, Buisson Renard, Asteroïde. Wines of remarkable purity and precision.
