Established in Gruissan, in the Aude, Château le Bouis is among the oldest properties in the Corbières appellation, with a documented history stretching back to 1771. Taken over in 2009 by Frédérique Olivié, the estate today produces red, white and rosé wines across 35 hectares currently in organic conversion.

A property rooted in the history of the Languedoc

In 1771, the brothers Pierre-Jean and Dominique Bouïs acquired the property, then known as the Domaine de l'Œil de Pal. The name Bouis — Occitan for the box tree — gradually replaced the original, and the estate passed through several generations before Frédérique Olivié purchased it in 2009. Her arrival marked a clear turning point: a commitment to more careful viticulture, a sharpening of the wine style, and a growing reputation confirmed by two of France's most respected wine guides, the Guide Hachette and Bettane+Desseauve.

Terroir: Mediterranean soils and full southern exposure

The 35 hectares of Château le Bouis sit on a varied mosaic of soils — alluvial deposits, clay-limestone formations, quartz gravels and rounded galets — typical of this coastal corner of the Corbières appellation. The vineyards face due south, directly towards the Mediterranean, giving the fruit exceptional ripeness while the proximity of the sea moderates temperatures and preserves freshness. This combination of warmth, salinity and well-drained subsoils is the foundation of the estate's character: wines with genuine southern generosity but without heaviness.
