Organic Roussillon from ancient vines and complex schist terroir

  • The domaine commands 85 hectares near Perpignan, with 45 hectares of vines—some exceeding 120 years old. Positioned between 150 and 200 metres altitude, the vineyard benefits from significant maritime influence some 20 kilometres from the Mediterranean, moderating the southern heat.
  • Terroir complexity defines the site: sedimentary limestone dominates the northern parcels, whilst primary schist characterises the south. These strata, arranged vertically, encourage deep rooting and mineral expression. The surrounding garrigues and oak forests contribute aromatic nuance.
  • Domaine Gauby represents authentic Roussillon viticulture—certified organic, farmed with respect for the land. We are pleased to offer this wine at a fair proprietary price through Les Halles de Quercamps.

In the mouth
Elegant fruit expression with fine-grained tannins and good structure. The finish is long and composed, leaving mineral and herbal notes. A wine of balance and character.
On the nose
Striking aromatic presence: dark berries and fresh black fruit, liquorice notes, garrigue and white pepper spice. The bouquet speaks clearly of schist and southern garrigues.
On the eye
Deep crimson red with good intensity
Breeding
Ten months' élevage in 500L barrels, foudres and concrete vats, then ten months' bottle ageing at the domaine
M. Francois
This is a wine I return to often—it captures the essence of Roussillon's old vines and distinctive terroir. I recommend it with game: wild mushroom risotto, sanglier, or a traditional Catalan daube. The tannins and acidity will also complement braised ham or charcuterie. A serious, unfussy wine for the table.

Grapes: Grenache, Carignan, Syrah, Mourvèdre, Macabeu. Appellations: Côtes du Roussillon Villages, IGP Côtes Catalanes. Cuvées: Muntada, Vieilles Vignes, Coume Gineste. One of the great names of Roussillon.
