Breeding
Aged one year in topped-up and stirred oak barrel
On the eye
Pale straw yellow with subtle green highlights.
On the nose
Citrus zest and cedar lead, followed by herbaceous notes—fennel and white flowers—with a flinty, mineral undertone characteristic of the appellation.
In the mouth
Crisp and energetic, with a mineral spine that drives the palate. Citrus and green apple flavours develop cleanly, finishing with good length and a dry, refreshing conclusion.

I find this a textbook example of modern Jura Chardonnay—precise, mineral-driven, and thoroughly food-friendly. It pairs beautifully with shellfish, particularly oysters and scallops, where its acidity and salinity sing. Also excellent with white fish and lighter poultry dishes. Drink now through 2028.

Domaine Berthet-Bondet is a wine estate in Château-Chalon (Jura). Run by Jean Berthet-Bondet. Around 15 hectares. Grapes: Chardonnay, Savagnin, Trousseau, Poulsard. Appellations: Château-Chalon (Vin Jaune), Côtes du Jura, Crémant du Jura, Macvin. Blue and grey marl soils (lias). Traditional Jura vinification. Wines of great typicity.
