On the eye
Brilliant pale gold with green-tinged reflections, suggesting freshness and vitality.
On the nose
An elegant aromatic profile combining white flowers, vanilla and pepper notes with dried fruits, roasted hazelnut, apple, pear and honeysuckle. The bouquet unfolds gradually with aeration.
In the mouth
Supple and concentrated on the attack, revealing bright citrus and white stone fruits. A distinctive mineral backbone provides structure and length, characteristic of this mountain terroir.
Haute Vallée represents the intellectual expression of Limoux's four terroirs. Where Autan offers immediate pleasure and Océanique delivers maritime freshness, Haute Vallée expresses mountain purity. This wine benefits from thirty minutes' opening to allow its white flower bouquet to fully emerge, rewarding patient appreciation with genuine complexity and finesse.
