- Certified organic since 2014. Domaine Pommier represents merely five per cent of Chablis's organically farmed vineyard area, making this a genuinely conscientious producer in an appellation still dominated by conventional viticulture.
- The vines planted on the Croix Aux Moines parcel have reached fifty years of age, lending complexity and depth to the fruit whilst maintaining the precision characteristic of mature Chardonnay in cool climates.
- Amongst the very few Chablis vignerons to undertake oak élevage, Domaine Pommier employs wood ageing with restraint, enriching the wine's texture without obscuring its mineral character or varietal identity.

This is a wine of genuine versatility. It performs admirably as an aperitif wine, yet possesses the structure and complexity to accompany scallops, lobster, and other refined seafood preparations. Its mineral backbone makes it equally at home with simply prepared white fish.

Domaine Isabelle et Denis Pommier is a wine estate in Chablis (Burgundy). Around 20 hectares. Grape: Chardonnay. Appellations: Chablis, Chablis Premier Cru (Côte de Léchet, Fourchaume, Beauroy), Petit Chablis. Kimmeridgian soils. Stainless-steel and oak-barrel vinification. Wines of fine minerality and aromatic freshness. Available at Les Halles de Quercamps.
BOURGOGNE BLANC
Le Domaine Isabelle et Denis Pommier cultive depuis 2014 en agriculture biologique l'un des plus beaux terroirs de Chablis. Ce Croix aux Moines révèle la minéralité du calcaire argileux par une approche d'élevage mixte : 70% en cuve et 30% en fûts de chêne. Vin de structure et d'équilibre, il accompagne l'apéritif, les fruits de mer et les poissons avec élégance.
