A vineyard reclaimed, a wine reborn

  • This cuvée displays considerable aromatic intensity and structure. The wine possesses the depth and character that comes from mature vines working in challenging terrain, offering genuine complexity rather than mere ripeness.
  • Particularly suited to rabbit stew, roasted pigeon with braised cabbage, and other traditional game preparations. The silky tannins integrate well with rich, earthy sauces and slow-cooked dishes.
  • Sourced directly from the domaine through Les Halles de Quercamps, this wine offers the authenticity of a small family producer without unnecessary intermediaries.

Breeding
Fermentation: stainless steel and concrete vats, progressive tannin extraction
On the eye
Deep cherry-black in colour, with good intensity and clarity.
On the nose
The bouquet centres on overripe dark fruits—blackberry and plum—with secondary notes of leather and subtle roasted character. The aromatics suggest good maturity and concentration.
In the mouth
A well-structured wine with silky tannins that provide framework without harshness. The palate shows good weight and balance, with the fruit flavours developing through the finish.
M. Francois
This wine pairs excellently with roasted pigeon and braised cabbage, rabbit stew, or game birds in sauce. The tannin structure and fruit concentration make it equally suitable for charcuterie and aged cheeses. A versatile addition to the table of anyone who appreciates Roussillon's understated character.
