Three-quarters in large wooden vats and one-quarter in demi-muids (600 litres), for 12 months
On the eye
Deep garnet, dense and luminous
On the nose
Crushed dark fruits with pronounced garrigue and wild herbs. The aromatics are precise and layered, suggesting both ripeness and freshness.
In the mouth
The attack is broad and fleshy, supported by rich, velvety texture. Mature, silken tannins are fully integrated, providing structure without heaviness. The finish is clean and sustained.
This is modern Châteauneuf-du-Pape at its most accomplished: rooted in tradition through its power and garrigue character, yet refined by the precision of its tannins and absence of coarseness. Excellent with game dishes—a civet of hare would be an ideal pairing.

Domaine de la Janasse is a wine estate in the Châteauneuf-du-Pape appellation, Courthézon (Vaucluse). Founded in 1973 by Aimé Sabon. Around 90 hectares of vines. Grapes: Grenache, Syrah, Mourvèdre, Cinsault. Single-vineyard cuvées: Vieilles Vignes, Chaupin. Wines capture the diversity of terroirs across the appellation. Available at Les Halles de Quercamps.
