Breeding
Three-quarters in large wooden vats and one-quarter in demi-muids (600 litres), for 12 months
On the eye
Deep garnet with purple reflections; a wine of evident concentration and maturity.
On the nose
Crushed dark berries and garrigue dominate, with secondary notes of leather and wild herbs emerging as the wine opens. The aromatics are restrained and dignified.
In the mouth
Noble and fresh on the palate, with fine-grained tannins and elegant structure. The mid-palate shows good weight without heaviness; the finish is clean and persistent.

A natural pairing with game dishes, particularly venison and hare preparations. The wine's acidity and tannin structure complement rich sauces and slow-cooked meats admirably. Consider it also with aged hard cheeses and charcuterie of substance.

Domaine de la Janasse is a wine estate in the Châteauneuf-du-Pape appellation, Courthézon (Vaucluse). Founded in 1973 by Aimé Sabon. Around 90 hectares of vines. Grapes: Grenache, Syrah, Mourvèdre, Cinsault. Single-vineyard cuvées: Vieilles Vignes, Chaupin. Wines capture the diversity of terroirs across the appellation. Available at Les Halles de Quercamps.
