Breeding
In one and two-year-old barrels for eight months and two years in bottle
On the eye
Deep ruby with magenta-rose reflections
On the nose
Aromatic intensity centres on rose and violet, with black cherry, plum and blueberry. Secondary notes of strawberry preserve emerge, followed by buttered brioche and subtle chocolate on the second nosing.
In the mouth
Suave, ample attack with voluptuous, fleshy mid-palate expressing preserved strawberry. The finish turns buttery and brioche-tinged, with exceptional aromatic persistence and fine balance. Closes on Amarena cherry notes.
M. Francois
A natural partner to traditional Lyonnais cuisine—particularly charcuterie, quenelles and gratinées. The wine's textural richness complements the region's hearty gastronomy. Also excellent with roasted poultry, soft cheeses, and lighter game preparations. Serve at 13-14°C to preserve aromatic finesse.

DOMAINES CHERMETTE

Based at Saint-Vérand in the Rhône, Domaines Chermette farm 53 hectares of predominantly granite soils at the heart of the Beaujolais appellation. The estate traces its origins to the seventeenth century, when it was known as Domaine du Vissoux; Pierre-Marie Chermette took the reins in 1982, and in 2023 his son Jean-Etienne gave it its current name. Certified Terra Vitis, the range centres on Gamay grown on granite — producing reds of real character and definition — alongside whites from Chardonnay on clay-limestone parcels. At Halles Quercamps, we have selected this estate for the rigour of its agri-environmental approach and the precision with which each cuvée reflects its terroir. A benchmark address for those who take Beaujolais seriously.
