Breeding
6 to 8 months in 80% large wooden vats and 20% in one to five year old barrels
On the eye
Deep ruby with purple highlights
On the nose
Intense and expressive, with red fruit character, subtle floral notes, and mineral undertones. Hints of smoke and spice add further dimension.
In the mouth
Fine and elegant on the palate, with a generous attack and rounded mid-palate. Soft, velvety tannins provide structure without harshness. Aromas of cherry, strawberry and blackcurrant syrup develop, with a lingering vanilla-tinged finish.
M. Francois
A natural companion to red meat dishes and sauced preparations. Particularly well-suited to game and, notably, dishes featuring morels or other wild mushrooms, where its mineral character and aromatic subtlety find their fullest expression.

DOMAINES CHERMETTE

Based at Saint-Vérand in the Rhône, Domaines Chermette farm 53 hectares of predominantly granite soils at the heart of the Beaujolais appellation. The estate traces its origins to the seventeenth century, when it was known as Domaine du Vissoux; Pierre-Marie Chermette took the reins in 1982, and in 2023 his son Jean-Etienne gave it its current name. Certified Terra Vitis, the range centres on Gamay grown on granite — producing reds of real character and definition — alongside whites from Chardonnay on clay-limestone parcels. At Halles Quercamps, we have selected this estate for the rigour of its agri-environmental approach and the precision with which each cuvée reflects its terroir. A benchmark address for those who take Beaujolais seriously.
