Breeding
Traditional Beaujolais semi-carbonic vinification with two daily punch-downs, ten-day maceration in concrete vats, no chaptalization, minimal SO2. The wine is aged six months in old oak foudres.
On the eye
Brilliant garnet robe with violet and carmine reflections.
On the nose
Delicate floral aromatics of faded rose, peony and violet, with subtle mineral undertones characteristic of the granite terroir.
In the mouth
Silky tannins frame an elegant palate of red fruits, grilled notes and forest floor nuances. The finish carries a gentle peppery quality and good length.

Poncie's versatility at table is considerable. The wine complements delicate white meats, roasted poultry, and lighter red meat preparations with equal grace. It also pairs well with freshwater fish and certain seafood preparations. Serve slightly cool to appreciate its aromatic complexity.

Domaines Chermette is a family wine estate in Saint-Vérand (Rhône), Beaujolais. Run by the Chermette family. Grape: Gamay. Appellations: Moulin-à-Vent, Fleurie, Beaujolais-Villages, Saint-Véran. Around 25 hectares farmed sustainably. Traditional whole-bunch vinification with semi-carbonic maceration. Fruity, terroir-driven wines.
