Breeding
Vinification: Traditional Beaujolais semi-carbonic fermentation with two daily punch-downs, maceration of 10 to 12 days in concrete vats, no chaptalization, minimal SO2. The wine is aged in large wooden vessels for 5 to 8 months.
On the eye
Ruby robe with purple reflections and bright, translucent appearance.
On the nose
The bouquet expresses diverse red fruits with floral notes of violet. The aromatic profile is clean and inviting, revealing the wine's Beaujolais character.
In the mouth
A pure, well-balanced palate with silky tannins derived from the granitic-schistous terroir. Red fruits—cherry, raspberry, blackberry, strawberry—emerge with abundance. The finish is persistent and satisfying, with good length.
M. Francois
Pair with red and white meats, game birds, and soft cheeses such as Camembert or Saint-Marcellin. The wine's structure and acidity make it equally suitable for charcuterie and lighter poultry dishes. Serve slightly cool to appreciate its aromatic finesse.
