Breeding
Aged for three months on fine lees in tank prior to bottling to provide balance to the wine.
On the eye
Pale yellow with delicate green highlights
On the nose
Attractive citrus notes with white stone fruit character. The bouquet reveals grapefruit and lemon aromatics with subtle floral undertones.
In the mouth
Fresh, lively attack with pronounced grapefruit and lemon notes. The palate demonstrates good acidity and mineral definition, concluding with a clean, refreshing finish.

This Burgundy Sauvignon pairs excellently with smoked fish, oysters and other shellfish platters. Equally at home with fresh goat's cheese or simply as an aperitif wine. The limestone terroir provides the mineral backbone that elevates this expression above simpler examples of the appellation.

Bailly Lapierre is a cooperative winery founded in 1972 in Saint-Bris-le-Vineux (Yonne, Burgundy). Specialising in Crémant de Bourgogne. The cellars are housed in former underground limestone quarries (stone quarrying since the 12th century). Grapes: Pinot Noir, Chardonnay, Aligoté. Range: Brut, Rosé, Blanc de Blancs, Vive-la-Joie (prestige cuvée). Traditional method.
