Breeding
Ageing in stainless steel for approximately 10 months followed by maturation on lees for over 5 years and disgorging, bringing complexity and roundness to this premium crémant
On the eye
Pale gold with silvery glints. Fine, persistent effervescence with excellent mousse.
On the nose
Expressive and fresh on the nose. Aromas of ripe pear and brioche with subtle floral undertones that develop with aeration.
In the mouth
Creamy and refined on the palate. White stone fruits, roasted almond and a mineral finish of considerable length. The mousse is refined and integrated.

Bailly Lapierre is a cooperative winery founded in 1972 in Saint-Bris-le-Vineux (Yonne, Burgundy). Specialising in Crémant de Bourgogne. The cellars are housed in former underground limestone quarries (stone quarrying since the 12th century). Grapes: Pinot Noir, Chardonnay, Aligoté. Range: Brut, Rosé, Blanc de Blancs, Vive-la-Joie (prestige cuvée). Traditional method.
