Breeding
Ageing in demi-muids for 24 to 30 months followed by bulk blending one month before bottling

Deep ruby robe with garnet highlights
On the nose
Marked purity on the nose: white pepper, dark berries, and violet. The aromatic profile is precise and elegant, with no excess.
In the mouth
A complex palate uniting dark forest fruits—blackberry, elderberry, cassis—with delicate floral notes of jasmin and violet. The structure is refined, the finish persistent and mineral.
A wine of considerable poise that pairs beautifully with roasted beef. The balance between fruit intensity and savoury spice makes it equally suited to game and aged cheeses. Best enjoyed over the next 8-12 years as the wine develops further complexity.

Domaine Faury is a family wine estate in Chavanay (Loire), Condrieu and Saint-Joseph appellations (Northern Rhône Valley). Run by Lionel Faury. Around 12 hectares on granitic hillsides.
