Breeding
Ageing in demi-muids for 24 to 30 months followed by bulk blending one month prior to bottling
On the eye
Deep ruby robe with garnet undertones
On the nose
Pronounced aromatics of white pepper and fresh dark fruits, with delicate violet notes. The bouquet unfolds gradually, revealing layers of complexity characteristic of the appellation.
In the mouth
A complex palate balancing dark forest fruits—blackberry, elderberry, blackcurrant—with refined floral notes of jasmine and violet. The structure is elegant, with fine-grained tannins and good length.
This wine pairs beautifully with roasted beef, particularly côte de boeuf. The wine's structure and acidity complement the richness of the meat, whilst its fruit and floral character enhance the overall dining experience. Equally rewarding served with game birds or mature cheeses.
