Breeding
Fermentation in stainless steel at low temperature following cold settling. Ageing on full lees, combining tank and barrel, with stirring during winter, then bottling the following spring.
On the eye
Pale yellow with golden reflections; occasionally showing green tints in youth.
On the nose
Expressive and clean, displaying characteristic Chardonnay notes with subtle buttery undertones. The bouquet unfolds with restraint and precision.
In the mouth
Broad and well-balanced, with lively acidity complemented by gentle roundness. Mineral tension provides structure and length, finishing with elegant clarity.
M. Francois
An ideal companion to river fish, terrines, and charcuterie, or simply as an aperitif. The wine's acidity and mineral character make it particularly rewarding with blue cheese or aged goat's cheese, where it cuts through richness with finesse.
