Breeding
Classic vinification with punch-downs and pump-overs. Maceration lasts 15 to 20 days depending on the vintage. Ageing takes place in barrel for 12 months, predominantly in one to two-year-old oak.
On the eye
Brilliant ruby, with fine clarity characteristic of well-made Pinot Noir.
On the nose
Blackcurrant and red berry fruits dominate the bouquet, with subtle mineral undertones. With time in bottle, forest floor and leather notes will emerge, adding complexity and depth to the aromatic profile.
In the mouth
Silky tannins and refined acidity define the palate. The wine displays admirable balance between ripe fruit and structural elegance, with the distinctive mineral character of the Haute-Côtes terroir evident throughout the finish.
M. Francois
In its youth, serve this wine with game dishes—venison with cherry gastrique would be particularly rewarding. After three to five years of cellar age, it will prove an excellent companion to a carefully assembled cheese course, particularly aged Comté or Époisses. The wine's evolution in bottle will be genuinely interesting to follow.
