Breeding
Approximately 11 to 12 months in oak barrels (with a very small proportion of new wood) to avoid masking the finesse of the terroir

Pale, luminous appearance with greenish glints, expressing the wine's freshness and purity.
On the nose
Aromatic profile centred on citrus and white stone fruits, with underlying mineral notes that reflect the limestone terroir.
In the mouth
Saline and assertively mineral on the palate, with good acidity and a clean, precise finish that emphasises the wine's terroir character.
M. Francois
This wine demonstrates the classic expression of Mâcon-Vergisson's limestone geology. Its mineral backbone and citrus-driven character make it particularly suited to jambon persillé, as well as to oysters, scallops, and other shellfish preparations. The subtle oak integration provides structure without overwhelming the wine's essential character.

Domaine Saumaize-Michelin is a wine estate in Vergisson, Pouilly-Fuissé appellation (Burgundy). Run by Roger and Christine Saumaize. Around 10 hectares of vines. Grape: Chardonnay. Appellations: Pouilly-Fuissé, Saint-Véran, Mâcon-Vergisson. Parcel-by-parcel vinification with oak-barrel ageing. Wines of great minerality and fine concentration.
