A mineral expression of Mâcon-Vergisson's limestone heart

  • Grown on the distinctive Sur la Roche vineyard, where hard limestone soils impart a pronounced mineral character and structural intensity that defines this Chardonnay.
  • Aged in a blend of new and used oak, achieving a refined balance between subtle wood influence and the natural vibrancy characteristic of the appellation.
  • A versatile food wine, particularly suited to shellfish, delicate seafood preparations, and creamy risottos where its salinity and mineral backbone provide excellent counterpoint.

Product features : Domaine Saumaize-Michelin Sur la Roche 2023 Mâcon-Vergisson Blanc 1.5L

Breeding
Approximately 11 to 12 months in oak barrels (with only a small proportion of new wood) to avoid masking the finesse of the terroir
On the eye
Pale, luminous gold with green glints, reflecting the wine's freshness and mineral purity.
On the nose
Aromatic profile centred on citrus — lemon and grapefruit — with white stone fruit notes and a subtle mineral undertone that speaks to the terroir.
In the mouth
Saline and distinctly mineral on the palate, with good acidity and a clean, persistent finish. The oak is well-integrated, supporting rather than dominating the Chardonnay's natural character.
M. Francois
This is a wine that rewards the patience of those who understand Mâcon-Vergisson's potential. The 2023 vintage shows the limestone terroir beautifully — that characteristic salinity and mineral grip that makes the appellation distinctive. I find it particularly compelling with charcuterie, especially jambon persillé, where the wine's acidity and mineral texture cut through the richness elegantly. A serious expression of place.
