Breeding
Ageing 8 to 10 months in stainless steel, on fine lees until bottling.
On the eye
Intense ruby-red with good clarity and a fine rim.
On the nose
Violet and morello cherry lead, followed by darker stone fruit—quetsche and damson. Underneath, a peppery spice with hints of bay leaf and mineral earth. The aromatics are restrained but persistent.
In the mouth
Supple and well-balanced. The palate shows red cherry and plum with a savoury undercurrent of herbs and black pepper. Fine, integrated tannins provide structure without harshness. Good length and a dry, mineral finish.
I recommend this wine with game—a civet of wild boar or venison would be ideal—or with beef dishes that benefit from a touch of Alpine freshness rather than heavy extraction. It also suits charcuterie and aged Savoyard cheeses. Drink now through 2030. A genuine expression of Jongieux terroir.
