Breeding
Ageing 8 to 10 months in stainless steel, on fine lees until bottling.

Ripe red fruits—cassis, blackberry, raspberry—with floral notes of violet and a peppery spice that builds on the glass
In the mouth
Crisp attack. The Mondeuse tannins are present but refined, characteristic of the variety. Peppery finish with good length and a mineral undertone
This is a wine of genuine freshness and tension, yet with sufficient roundness to drink well now. The Mondeuse structure is unmistakable. I find it particularly suited to freshwater fish, alpine cheeses, or simply as an aperitif wine. It rewards a slight chill and shows the Alpine terroir with clarity.
