Ageing on fine lees with stirring twice weekly until bottling
On the eye
Clear, deep golden yellow with amber reflections, showing a wine of presence and maturity in bottle
On the nose
Refined floral notes of hawthorn and white flowers, followed by white and yellow stone fruits—pear, peach, rhubarb. Candied citrus, honeyed undertones, and subtle spice: ginger, coriander, green tea.
In the mouth
Volumetric yet balanced, with tension between acidity and the wine's natural richness, underpinned by fine minerality. Suave texture with a fruited finish—quince, apricot, preserved pineapple—lifted by gentle spice, smoke and pepper.
A wine of freshness, tension and roundness. Its natural acidity and mineral spine make it particularly suited to freshwater fish, Alpine cheeses, and lighter seafood preparations. Equally rewarding as an aperitif wine, served cool but not chilled.
